Red Rice (লাল চাল)
Kartik Shail is a variety of Aman rice that is harvested earlier in the season, specifically during the month of Kartik. Farmers have named it "Kartik Shail" because it comes in earlier than other Aman rice varieties. Bangladesh is known for its diverse rice varieties, each with unique characteristics and flavors. This rice variety is often referred to as the "harvest that drives away scarcity" because it arrives earlier than the others, providing a timely source of food.
During the month of Agrahayan, if you wish to enjoy new rice with pitha (traditional rice cakes), Kartik Shail is the best choice. The grains of Kartik Shail rice are light, with a slight dark color, and have a long, round shape. The rice is medium-sized, and when cooked, it emits a sweet aroma. It is excellent for making rice, chura (flattened rice), and pitha. Various pithas, such as vapa (steamed rice cakes), chiti (another type of rice cake), and pati sapta (thin rice pancakes), are particularly delightful when made with this rice. Once harvested, farmers typically use this rice to make kheer (rice pudding) mixed with new jaggery (date palm sugar).
The reddish-colored rice is a type of red rice. The rice produced from paddy that has been ground using a traditional rice mill (dhaki) retains more fiber and is notably tasty. The fiber-rich rice is best cooked without discarding the water, as this preserves its nutritional value. It is advisable to cultivate the habit of feeding children red rice from a young age.
